Curried Pork Chops with Honeydew and Cucumber
Honeydew melon and cucumber cubes make a pleasantly chilled salad with just enough sweetness to play off the classic pork-and-fruit combination. Add some pork chops grilled with a flavorful curry oil, and you’ve got a perfect sweet-spicy combination for grilling up as a quick dinner or a weekend lunch. If you’ve been craving curry flavor but don’t want to heat up the whole house making a big rich pot of actual curry, this is one simple and tasty alternative.
  1. Season the pork chops to taste with sea salt and freshly ground black pepper. In a bowl combine, the olive oil and the curry powder.
  2. Coat the chops with the curry oil.
  3. Grill each chop for 3 to 4 minutes per side.
  4. In a bowl, combine all the ingredients for the salad and toss gently. Serve the pork chops with the honeydew and cucumber salad.
