Curried Pork Chops with Honeydew and Cucumber

Honeydew melon and cucumber cubes make a pleasantly chilled salad with just enough sweetness to play off the classic pork-and-fruit combination. Add some pork chops grilled with a flavorful curry oil, and you’ve got a perfect sweet-spicy combination for grilling up as a quick dinner or a weekend lunch. If you’ve been craving curry flavor but don’t want to heat up the whole house making a big rich pot of actual curry, this is one simple and tasty alternative.



Pork Chops

4 pork chops

1 tsp. curry powder

2 tsp. olive oil

Sea salt and freshly ground black pepper

Honeydew cucumber salad

2 cups honeydew melon, cubed

2 cups cucumber, cubed

¼ cup extra-virgin oil olive

1 shallot, chopped

¼ cup fresh cilantro, minced

Sea salt and freshly ground black pepper


1Preheat your grill to high.

2Season the pork chops to taste with sea salt and freshly ground black pepper.

3In a bowl combine, the olive oil, and the curry powder

4Coat the chops with the curry oil

5Grill each chop for 3 to 4 minutes per side

6In a bowl, combine all the ingredients for the salad and toss gently

7Serve the pork chops with the honeydew and cucumber salad
